Lemon gelato


½ cup (110 g) AGRAGOLD white crystal sugar

½ cup water

½ cup sweet or dry white wine

½ cup (125 ml) lemon juice, strained

1 egg white


Preparation method: Combine sugar, the water and wine in small saucepan; stir over low heat until sugar dissolves. Bring to a boil; reduce heat. Simmer, uncovered, 10 minutes; cool.


Stir juice into mixture; mix well. Pour mixture into medium shallow pan; freeze about 1 hour or until mixture is just firm.


Remove from freezer. Turn mixture into medium bowl; using fork, beat until smooth. Beat egg white in small bowl with electric mixer until firm; fold into lemon mixture. Return to pan; freeze until firm.
