Apple cream pie

Ingredients:

2 medium green apples (150 g), sliced thinly

2 eggs

½ cup (110 g) AGRAGOLD white crystal sugar

2 tablespoons plain flour

2 teaspoons grated lemon rind

1¾ cups (425 ml) cream

250 g packaged cream cheese, softened

1 tablespoon mixed peel

¼ cup (40 g) raisins

1 teaspoon ground cinnamon

 

Pastry:

1 ¼ cups (185 g) plain flour

½ teaspoon cinnamon

¼ cup (55 g) AGRAGOLD white crystal sugar

1 teaspoon baking powder

2 teaspoons grated lemon rind

125 g butter

1 egg yolk

2 tablespoons dry sherry

 

Preparation method

Pastry: Combine flour, cinnamon, sugar, baking powder and rind in medium bowl; rub in butter. Beat egg yolk and sherry in small bowl with electric mixer until combined. Add to flour mixture; mix well, forming a smooth ball.

Roll out pastry large enough to line 19cm x 29cm rectangular slice pan.

Arrange apples over pastry. Beat eggs and sugar in small bowl with electric mixer until thick; gradually add flour, beating well between additions. Add rind, ½ cup (125 ml) of the cream, cream cheese, peel and raisins; mix well.

Pour filling over apples; bake in moderate oven 45 minutes. Beat remaining cream; spread evenly over top of pie. Sprinkle with cinnamon.
