125 g ground almonds

1 cup (165 g) AGRAGOLD white crystal sugar

2 large egg whites

½ tablespoon vanilla essence

2 drops almond essence

blanched almonds


Preparation method: Beat ground almonds, sugar, egg whites, vanilla essence and almond essence in medium bowl with electric mixer on medium sheet 3 minutes; stand 5 minutes.


Spoon mixture into piping bag fitted with 1 cm plain tube; pipe in circular motion, to make biscuits about 4cm in diameter. Top with a blanched almond.


Bake in moderate oven 15 minutes or until tops are browned lightly. Leave on trays a few minutes before removing with metal spatula to cool on wire rack.
